It’s my most-requested recipe, and it’s not even green!

My hot pink breakfast smoothie is loaded with root vegetables. Don’t forget about those ROOT vegetables that have such great carotenoid antioxidants with many health benefits in your diet. A fun side effect is that they give you a slight wintertime “tan” if you eat enough of them! (Juice them. Or put a whole carrot and a chunk of a raw peeled beet in this, my favorite breakfast.)

And, coconut water has the perfect electrolyte balance for an athlete.

I’ve evolved this recipe to also cover PROBIOTIC needs. I use water kefir grains to “ferment” the coconut water. You can buy it canned with no additives and some brands are even organic. I get canned coconut water at Costco or the health food store (where they sometimes have case sales). Every day, I strain the coconut water “kefir” into my blender and add another can to the jar of water kefir grains. (You can buy grains online or at many health food stores.)

Fermenting your coconut water is a very easy HABIT you can start that will really improve your digestive health and your immune function. I do not like “water kefir” because of the sugar. It is said that the sugar is “consumed” by the living organisms in the grains, but obviously this isn’t true because it tastes so sweet.

The past 2 years have been among the most stressful of my life, but I got sick only ONCE and it lasted just 24 hours. That’s pretty remarkable considering I’ve been around lots of sick people and on many airplanes. I really believe that lots of green juice and my fermented foods habits are what keep me so healthy, even in stressful times. Before I started these habits, I was sick constantly all winter!

Today I subbed frozen blueberries for strawberries in my pink smoothie, and it was still delish. Here’s a photo for you! You know blueberries have powerful anti-cancer properties. If you don’t like drinking frozen things in winter, save this for when it warms up!

ROBYN’S HOT PINK BREAKFAST SMOOTHIEhot pink breakfast smoothie

  • 1 1/2 cups coconut water (“ferment” it overnight on the counter with water kefir grains, strain it, and put new coconut water in for tomorrow)
  • 1/4 cup raw cashews (not roasted)
  • 2–4 large dates, pitted
  • 1 large carrot, cut in chunks
  • 1/3 of a medium raw beet, peeled
  • 1-2 teaspoons organic vanilla
  • 12 large strawberries (10 oz. bag), or equivalent amount of frozen blueberries

Makes 4 cups in the blender

  1. Blend all ingredients except berries in your BlendTec or Vitamix until smooth.
  2. Add berries and blend till smooth.
  3. Pour into quart jar and enjoy!

Makes a 400-450 calories perfect pink smoothie breakfast!

    This question is for robyn…I was reading that if you use the same green for smoothies you will build up a toxin is this true i dont really like other greens besides spinach.

    My comment is about your green smoothie. For three years I have drank a green smoothie with lots of kale, spinach, and cabbage plus fruits about 20,iz a day. I have developed Vit. A toxicity and my hair started to fall out, and other problems. How could this happen Anyway I am off it for a while

          I’ve seen Victoria Boutenko make that claim, Paul, but I have looked and can’t find any hard evidence of it.

    My wife and I started making these smoothies. We just noticed that you peel the beet. We have been washing them and putting the whole beet in the blender. It still tastes great and I know that there is a lot of nutrition in the peel of most vegetables. Would you recommend that we start to peel them?

    I see that this recipe makes four cups… but how much is one serving? I assume I’m not supposed to drink all four cups.

    Hi Robin, I’m very interested in trying your 12step program and already do a number of things on the program. I’m very health conscious but have some issues. I found our recently that I am extremely high in oxalates, and many many things that are plant based are high in oxalates ( such as spinach, beets and nuts, etc). Are you familiar with this, and what would you suggest that I do? Thanks so much. Nancy

      Hi Carole, I can’t advise you about specific health problems, of course–not ethical. It’s high in natural sugars. My grandmother beat cancer drinking a LOT of beet and carrot juice, but I don’t know the program you are attempting to follow…..really glad you avoiding refined sugar for sure!

    Thanks for this recipe. I love it! I’m just wondering if it would be okay to peel and cut up my beets into smoothie-sized chunks and then throw them in the freezer for future use?

      Hi Lisa, Jess here. I’m the blog manager at GSG. That would be perfectly fine. Freezing fruits and vegetables when they are ripe helps preserve all the phytonutrients and minerals found in their flesh, even beets. That sounds like a great way to preserve your beets. Go for it!

    i have been making this for the past couple of weeks and i love it! but i never get 4 cups…. i follow the recipe and i only get about 3 cups. the only thing i can think of is that my strawberries are small? i buy organic frozen ones and they are pretty small. other than that, am i missing something?

      Ash, that must be it! It’s a 10 oz. bag I use, if that helps. This is the thing with whole-foods recipes….lack of standardization, so output and also flavor / texture can vary!

    Hey GSG! Am getting into whole food eatings in a bug way and currently have an allergy to cashews. Would you recommend another nut in the place of them. Its a light allergy and perhaps leaving once I grt the whole foods program in order. Thank You in advance for your time!

      Lots of things you can sub, Rebecca—my fave is pine nuts. But you may like sesame seeds, or tahini (sesame paste) or another softer nut?

    I bought water kefir grains from cultures for health and it says to rehydrate them using sugar water. I’m trying to avoid sugar and am at a loss of what to do! Can I just add my coconut water to the dehydrated grains and it will still work? Also how long can you use the grains before you need to get new ones? The packet came with lots of little grains- do I use all of them? I’m so new to kefir! Thanks!

      lauren, that’s what i do. just add them to coconut water! i keep them forever. use everything they sent and just reuse every day after draining off the coconut water.

        Thank you for responding so quickly. My kefir grains are in coconut water as we speak! I have LOVED the pink smoothie. I have a question not related to this and hopes it’s ok that I ask. 3 weeks ago after seeing a Chris Beat Cancer video then saw one of your videos that same day, I decided to change my Paleo diet of 5 years to a plant based diet to prevent any cancer growing and have the best health possible. I chose Paleo because I always bloated when I ate grains, legumes or fruits. I am trying to push past that to stay on a plant based diet but am still bloated almost always by dinner. The biggest culprits are corn, nuts (even soaked) and honey. I have been soaking beans and eating wild rice which is a full feeling but not bloated. I also have acne now- aaahhhh! Its getting depressing and I’m trying to stick with this. Thinking i need to heal my gut more. Trying the kefir coconut water now, maybe Aloe from Stockton 1? Thought about the 26 day detox as a gut healer?!?!?! I feel like I’m eating all clean from the earth foods and should feel better!

          Sounds like you are detoxing….keep at it tho. Wouldn’t colonics be Ideal with this program?
