Mother's Day Blueberry Dessert

  • 1/2 cup young Thai coconut meat
  • 1/2 cup coconut water or coconut milk
  • 1 tbsp lemon juice
  • 2 tbsp real maple syrup or other syrup sweetener of your choice
  • 1/3 cup cashews
  • 6 frozen strawberries
  • 2 1/2 cups blueberries

  1. Blend all ingredients other than blueberries into a cream.

  2. Add to crystal glasses with blueberries, creating layers as you like.

    This looks delicious. But I’d probably have to drive 2 hours to find young Thai coconut meat, if I could find it at all. What is a good substitute?

      Even Walmart has carried Young Thai Coconuts – you should be able to find it, especially in a health food store that sells produce. It is white in color (because they have taken off the green outside) and it is flat on the bottom and comes to a point at the top. You will also find it wrapped in cellophane. Using this description should let you know you are getting the right kind of coconut. (It definitely isn't the hairy brown kind.) The Thai coconut is still hard to open so be careful in doing so.
      I use the softer, rubbery meat from the inside for all kinds of desserts. I like to make banana cream pie with a pecan nut crust with this type of coconut.
      Hope you can find it and then enjoy! The coconut water from this is super sweet and is great in smoothies or just to drink on its own. Remember, that coconut water is nature's 'gatorade.' Full of electrolytes and way better for you than the awful colored stuff you buy in the store. Fresh coconut water is so much tastier than coconut water from a can!

      Sugar free organic dried shaved coconut and lay it in a glass pie pan then cover with Coconut milk let soak for an hour. Proceed with recipe.

    Young Thai coconut meat….I like this ingredient list…. Is that something I can find at a health food store? I can’t say if I’ve ever seen this before. Hope I can find some because it sounds yummy.
