Dutch Beet Salad
A healthy, delicious, and pretty alternative to the classic potato salad

- 1 lb steamed beets diced
- 1 lb steamed potatoes diced
- 1/4 cup scallions chopped
- 1 whole apple diced
- 2 whole hardboiled eggs diced
- 1/4 cup dill pickle diced
- 1/8 tbsp sea salt
- 3 tbsp raw apple cider vinegar
- 3 tbsp extra virgin olive oil
- 1/2 cup Gouda, Edam, Muenster, or similar sharp cheese
- several spoonfuls Vegannaise

Steam beets and potatoes

Combine all ingredients aside from cheese and Vegannaise, toss together

Add cheese and dollops of Vegannaise, stir and serve
