No-Cook Tomato Sauce

Here’s a perfect way to use your big tomato crop, without cooking or even spending much time.

  • 2 cloves garlic, chopped
  • 1 tbsp raw apple cider vinegar
  • 3 lbs fresh tomatoes
  • 1 tsp maple syrup or raw honey
  • 1 handful fresh basil, oregano, or both
  • 1 pinch sea salt

  1. Pulse in your blender until blended but still chunky, or whatever consistency you prefer. Serve over pasta, quinoa with vegetables, or with chips.
