Almond Joyful Gems

Little delicious and healthy desserts (with a surprise in the middle!) to share with family and friends.


  • 1/2 cup almonds blended into powder
  • 1/4 cup coconut oil
  • 3 tbsp raw honey
  • 1/2 tsp vanilla
  • 1 tbsp cocoa powder
  • 3/4 cup shredded coconut
  • 12 almonds

  1. Blend almonds to powder. Pour into a bowl and set aside. 
  2. Mix by hand in another bowl softened coconut oil, honey, vanilla and cocoa powder. Stir in shredded coconut.

  3. Form mixture into balls and place 1 whole almond inside each one.

  4. Next, roll the balls in the almond powder. Refrigerate until firm or freeze for another day.
