Mango Bars

Healthy yummy mango bars have an almond crust!

Crust

  • 1 cup almonds
  • 1 cup cashews
  • 1 cup flax seeds
  • 3 tbsp agave
  • 1 tbsp water
  • 1/2 tsp vanilla extract

Top

  • 2 mangoes, peeled and chopped
  • 2 lemons for the juice
  • 1/4 cup coconut oil
  • 1/4 cup agave
  • 1 banana
  • 1/2 cup shredded coconut

Crust

  1. Blend almonds, cashews and flax seeds to powder. Transfer to bowl and add agave, water and vanilla. 

  2. Stir and pour in to a oiled 9×9 in. square pan. Press down evenly to form a crust.

Top

  1. Combine in the blender: cut up mangoes, juice of lemons, coconut oil, banana and agave.

  2. Blend until smooth, then stir in the coconut. Pour onto crust.

  3. Freeze until set, about 4 hrs.Cut into squares and enjoy!
