Raw Chocolate Mousse

A chilled, healthy chocolate treat from my friends Michael and RaeVern Dumond of Seattle.

Course Dessert

  • 1-2 young coconuts
  • 1 1/2 cups raw organic cashews
  • 1-2 tbsp organic cacao powder
  • 1-2 tbsp agave
  • dash sea salt
  • 1-2 tsp vanilla extract

  1. Open coconut(s) and drain coconut water into high-speed blender. (Approximately 1 1/4 cups.)
  2. Add all ingredients and blend in at once, scrape the coconut meat out. Blend, with speed slow at first, increasing to high. 

  3. Pour into pudding cups and leave in refrigerator for two hours or more.
