Nut Butter

  • 1/2 cup creamy natural peanut butter or almond butter
  • 1/2 cup raw honey
  • 1 tbsp coconut oil
  • 1/2 cup GSG Sprouted Flax
  • 3/4 cup wheat germ
  • 1/2 cup walnuts chopped

Chocolate Coating

  • 1/2 cup coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup raw honey or agave syrup
  • 1 tsp vanilla
  • 1/2 tsp Chinese Five Spice
  • 3 tbsp unsweetened coconut milk
  • pinch sea salt
  • 2 cup unsweetened shredded coconut

  1. Combine nut butter ingredients into a mixing bowl

  2. Place three or four heaping tablespoons of mixture on a waxpaper-lined cookie sheet. Shape into two one-inch diameter rolls. Cool for 10 minutes in freezer

  3. Once cool, slice rolls into one-inch sections and form each into ball. Replace in freezer while preparing chocolate coating

  4. Scoop semi-solid coconut oil into a clean bowl. Gradually add up to ½ C cocoa powder, stirring until a soft consistency is reached

  5. Add honey, vanilla, Chinese Five Spice, and sea salt. Stir in coconut milk

  6. Retrieve chilled balls, roll in chocolate. With two forks, lift and place chocolate-covered balls into a shallow bowl filled with half of the shredded coconut.

  7. Sprinkle tops and scoop up onto sides, then place onto a waxed paper-lined cookie sheet. Place in freezer for about 20 minutes until firm.

  8. Store in a plastic container in refrigerator or freezer. From freezer, let sit at room temperature for 5–10 minutes before serving
