Dutch Beet Salad

A healthy, delicious, and pretty alternative to the classic potato salad

  • 1 lb steamed beets diced
  • 1 lb steamed potatoes diced
  • 1/4 cup scallions chopped
  • 1 whole apple diced
  • 2 whole hardboiled eggs diced
  • 1/4 cup dill pickle diced
  • 1/8 tbsp sea salt
  • 3 tbsp raw apple cider vinegar
  • 3 tbsp extra virgin olive oil
  • 1/2 cup Gouda, Edam, Muenster, or similar sharp cheese
  • several spoonfuls Vegannaise

  1. Steam beets and potatoes

  2. Combine all ingredients aside from cheese and Vegannaise, toss together

  3. Add cheese and dollops of Vegannaise, stir and serve
