Quick and Easy Taco Soup

  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 jalapeno, chopped
  • 2 tbsp coconut oil or olive oil
  • 3 cans black or kidney beans
  • 2 cans diced tomatoes
  • 1 can diced green chilies
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1 dash cayenne
  • sea salt to taste

  1. Saute the onion and pepper in the oil in a large saucepan until tender
  2. Then add remaining ingredients, simmer for 1/2 hour or more.
