It’s a Beet Monster

I’m not even sure what to say about this, that came out of my garden today. Technically it’s a beet. I’m not sure the photos let you appreciate just how big it is, about 12 in. tall. It looks like a replica of a human heart—blood color, to be sure, but also with the aorta and ventricles and stuff.

So here it is: I cut the skin off, and chopped it into chunks. Then baggies in the freezer. It’s now 32 days’ worth of Hot Pink smoothie that I’ve been obsessed with, for breakfast, for about 8 years now (beets, carrots, frozen strawbs, coconut liquid—see Ch. 10 of 12 Steps, YUM).

    Pretty neat! I have been trying to drink the breakfast smoothie but I get hungry in an hour! I am nursing so maybe that is why…… I know I need extra calories……

  2. I have been drinking Hot Pink Smoothies for a while. I enjoy the taste and they do fill me up until lunch time, but I have been putting on some LBS and believe it been since I started the breakfast smoothie. Any comments?

      Sandy, it is about 400 calories, so it shouldn’t be behind any weight gain. You’re using coconut LIQUID (or WATER), right? Not coconut MILK, which is much higher in fat and calories.

    I finally made the Hot Pink Smoothie and it was fantastic. I made some for my mom and grandma to try and they loved it too. So now, every time they come over, this is our breakfast. It tasted like a strawberry shake with a twist. LOVE IT!!!!

    I know this is an older post, but am just now seeing. You are hilarious, Robyn! That is a ginormous beet!!! It DOES look like a human heart! Haha! Well, I make the hot pink smoothie, too… but sans the coconut liquid (I don’t do well w/ coconut), and it STILL tastes FAB! Whenever I painstakingly peel my beet every time, I think, “Does Robyn peel a beet EVERY morning?!” Sooo good to know that you can freeze beets! Woo-who! I don’t think I do well w/ cashews either, so my next step is to try soaking those, & see if I can digest better… we shall see! Thank you.
