4 C rolled oats (uncooked)
1 C Sucanat or coconut sugar
1 tsp. vanilla extract
½ tsp. ground cinnamon
½ C shredded coconut
1 C chopped nuts (any kind)
¾ C melted coconut oil
½ C raw honey
⅔ C natural peanut butter
Preheat oven to 450 degrees. Combine wet ingredients in a large bowl and mix well. Add in all dry ingredients and mix well until combined. Press onto a large sheet pan, lightly greased or covered with parchment paper. Bake 9-11 min. Cool for 1 hour. Cut into bars and store in airtight container to keep them chewy. Makes 20 bars.
