Cashews are a raw foodist’s best friend for making creamy sauces and desserts, and they’re actually lower in fat and calories than most other nuts. (The fat they do contain is heart-healthy monounsaturated fats, and eating nuts daily has been linked in research to weight loss.)
At room temperature, they’ll be good for only 6-12 months, so I recommend keeping them in your freezer indefinitely, or vacuum seal them in quart jars for 1-2 years in storage.
Great for making cashew milk.
My famous Hot-Pink Breakfast Smoothie uses a quarter-cup of cashews, for a creamy texture offsetting the “pink” of the carrot and beet combined—it’s a very filling, high-nutrition, delicious breakfast with 400 calories and a perfect 80-10-10 carb/protein/fat breakdown. Lots of my treats in Chapter 11 of 12 Steps to Whole Foods use cashews, too, including the Almond Cream Sauce drizzled on warm Cherry-Almond Blondies.
