Combine PBfit and water for a healthy peanut butter spread that is one third the calories and 85% less fat than traditional peanut butter. PBfit makes a great dip for apples, bananas, and sliced veggies. Throw a few scoops into your smoothie, yogurt, or oatmeal to add a flavorful protein boost. You can also replace some of the flour in your baked goods to make PB muffins, pancakes and brownies.

PBfit Power Bar

1 ½ cups PBfit
½ cup oat bran
¼ cup Chia
½ cup whole wheat flour
¼ cup wheat germ
½ tsp. kosher salt
½ cup raisins
½ cup dried cherries
½ cup dried pineapple
1 (12.3-ounce) package soft silken tofu
½ cup unfiltered apple juice
⅓ cup Coconut Palm Sugar
2 large whole eggs, beaten
BBF Coconut Oil, for pan

Preheat the oven to 350 degrees F. Line the bottom of a 9 x 13 inch glass baking dish with parchment paper and lightly coat with coconut oil.

In a large mixing bowl, combine the PBfit, oat bran, wheat flour, wheat germ and salt.

Coarsely chop the raisins, dried cherries, pineapple and place in a small bowl.

In a third mixing bowl, whisk the tofu until smooth. Add the apple juice, brown sugar, eggs one at a time, whisking to combine after each addition. Add this to the dry mixture and stir well to combine. Fold in the dried fruit. Spread evenly in the prepared baking dish and bake in the oven for 35 minutes or until the internal temperature reaches 205 degrees F.

Remove from the oven and cool completely before cutting into squares. Cut into squares and store in an airtight container for up to a week.

PBfit Overnight Oats

1 cup rolled oats
4 tbsp. PBfit (or Chocolate PBfit)
2 tbsp. Chia
½ cup nonfat Greek yogurt
½ cup milk (dairy or almond)
2 tsp. Agave
1 tsp. cinnamon

In a medium bowl mix together oats, PBfit, chia and Greek yogurt. Add milk and agave. Cover and refrigerate for 5-6 hours or overnight. Garnish with cinnamon.
