Fall Spiced Pancakes

  • 1 C whole wheat flour
  • ¾ C soft white wheat flour
  • ⅓ C organic cornmeal
  • ¼ C whole rolled oats
  • 2 Tbsp. coconut palm sugar
  • 2 tsp. baking powder
  • 1 tsp. sea salt
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • Pinch of nutmeg or 1 tsp. pumpkin pie spice
  • 1 ¾ C milk (or substitute coconut milk)
  • 4 Tbsp. coconut oil
  • ¼ C raw honey
  • 3 organic eggs

Mix dry ingredients in a large bowl. In another bowl combine wet ingredients and mix well. Combine wet and dry ingredients and mix until just incorporated. Heat in skillet on medium heat for 3-4 minutes on each side until cooked through
