Real egg vs. dehydrated in Oat-Coconut Cookie Mix
Hi Robyn,
For the recipes using the Oat-Coconut mix from chp. 11 of the 12 steps, can I substitute a fresh egg for the dehydrated eggs (I have my own chickens and need to find uses for all my fresh eggs)? I realize I would need to add it later with the rest of the ‘wet’ ingredients, but I’m not sure how many to use. Would it be one egg for every 2 Cups of mix?

I would have to test it–I don’t know. If you do, let me know how it turns out, okay? That would be a valuable tip to put in the recipe for those who don’t want to use the mix for long-term storage or for gift giving.
I decided to experiment
I used 2 C. of the dry mix, added all the wet ingredients (except the water, which I assumed was added for the dehydrated eggs), and used 1 fresh egg. I did the chocolate variation and noticed that it listed 4 Tbl of water instead of 3 Tbl like all the other variations, and I thought you must have added 1 extra Tbl of water because of the cocoa powder, so I added 1 Tbl water in addition to the fresh egg. I don’t know how big a difference the 1 Tbl made, but the consistency of the dough seemd about right. The cookies came out perfect! They were barely crispy on the outside and nice and soft on the inside, exactly the way I like them. My two year old loved the cookies and it feels great to be able to give her a healthier treat. This is one of the first recipes I have made from your 12 steps (besides the smoothies) and I really looking forward to trying the others. THANKS!
Marisa, okay, so you made the mix according to my directions but you left out the egg powder, right?
Then you added 1 egg to a batch (of 2 cups mix).
Just want to make sure I have that right–?
