Raw Food: try this Rainbow Salad (way to use your zucchini and squash)

Here’s a fun way (from Ch. 5 of 12 Steps) to use the zucchini coming out of your garden (or your neighbor’s).   Thought I’d share it with you since I’m making it for dinner tonight on top of quinoa that takes 10 mins. to cook.   My kids groan about all the ways I am (over-)using zucchini, though I confess to throwing some baseball-bat-sized ones in the compost pile.   Last night was zucchini fritters (also Ch. 5–my squash haters protest and then say, “Oh, yeah, I forgot–I actually like these” and ask for more.)

Eat dinners like Rainbow Salad Over Quinoa regularly and you won’t feel exhausted at 10 p.m. You’ll be still doing some project you suddenly had the energy for and have to force yourself to go to bed. And then you’ll bounce out of bed in the morning because your body didn’t have to go into overdrive during the night to break down that slab of cow carcass. Oh, did I just say that? I’m so sorry! I mean steak!

Tomorrow I’ll blog photos I just took of my garden and the inside of my freezer–the top two ways I save money eating whole foods!

Rainbow Salad

  • 2 medium zucchini (about 1 lb.), diced
  • 2 large yellow squash (about 1 lb.), diced
  • 6 roma tomatoes, chopped (or 4 regular tomatoes, liquid drained)
  • 1/2 cup Kalamata or green olives, drained and chopped
  • 1/2 cup sun dried tomatoes (bottled, drained and chopped finely)
  • ½ red onion, chopped
  • 1/2 cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • 2 tsp. dried basil (or ¼ cup fresh, chopped)
  • 1 tsp. oregano
  • ½ tsp. freshly ground pepper
  • 2 Tbsp. flaxseed, freshly ground

Toss all ingredients well and serve.Optionally, serve this on a bed of cooked quinoa seasoned with a pinch of sea salt.

    Weren’t you on Wife Swap a few years ago? You made your kids drink green smoothies and write essays when they misbehaved. Then you made the girl who’s house you swapped to cry because you asked her to take out the garbage and help make a salad? Then they made you eat a hot dog.

    That sounds great! If I can get to the grocery store tonight then that will be my dinner! I’m happily in my 2nd trimester now and craving lots of veggies and fruits, especially raw salad veggies.

    Holy cow, no pun intended, I am so glad I found you! I am going to order your book right now. I have been a green smoothie girl since about April, after my husband had a stroke at 39 and we “thought” we were both really healthy. A friend gave us “Green For Life” by Victoria Boutenko. Well, NOW I know what health feels like! Green smoothies, for breakfast and dinner, have radically changed my life, and my husband’s….and the ripple effect is fascinating! So many of our friends and family are doing it too. It is permanent for me. So many of my old “issues” are just totally gone. I am losing weight, and not even thinking about it…and I have had weight issues my whole life, and have felt so ashamed about it. Now I eat with pride and love and joy! And dig into my “tight clothes trunk”…and they are loose! And we are now finding so many local farmers to get our greens from. I am eating a little cheese, but it is from a happy goat down the road. I have all these ingredients listed above so my hubby will get a yummy surprise when he gets home from work! YES he is back at work! With meditation, whole food living, and a radical change in attitude and thinking, he is healing himself!! Yeehaww! Love, Betsy

    thankfully my neighbor is joyfully sharing lots of garden treasures- (zuchinni, squash and onions!) —I made some zuchinni fritters with white bean flour (instead of wheat) and some chopped red onions and other spices and they were great even without any eggs! SOO good and quick!

    I also made Dr. Furhman’s Recipe from Eat to Live (the only one in the book worth trying–from what I’ve tried–most are not very good)–for

    “Dr. Furhman’s famous anti-cancer soup” it calls for 6-10 zuchini, onions, leeks…celery and carrot juice and all that fun stuff! it was SOOO good! and most of it was free ingredients (I don’t think I’ll be able to afford to make it without a garden or other garden presents) SOOOO good-! and a quick way to use up zuchinni .

    Megan, that was us, yes. But some of what you saw was “made for TV” or more accurately, “manipulated for TV.” 😉
